FROM PASTURES TO PLATE, CLIMATE CHANGE MAY BE CHANGING THE FLAVOR OF FRANCE’S FAMOUS CHEESES

In France, cheese is more than food. It is tradition, identity, and a taste of the land.

But that familiar taste could be changing.

Rising temperatures, prolonged drought and shifting weather patterns are affecting the grasslands where cows, sheep and goats graze, and ultimately the milk used to make some of the country’s most iconic cheeses.

And there is another ingredient at risk: the microscopic world of bacteria and fungi that gives each cheese its distinct character.

As the climate changes, these delicate microorganisms may also change, potentially affecting the aroma, texture and flavor that generations of cheesemakers have worked to preserve.

So while the world worries about melting glaciers and warming oceans, France is facing a much more unexpected climate question: what happens when the changing planet starts to change the taste of cheese?

Because for French cheesemakers, saving a tradition may now mean protecting not just the recipe, but the land, the animals and the tiny organisms that make every bite taste uniquely French.
